Any good tips on making muffins?

How can I make a strawberry and mango muffin taste good while keeping the fruit fresh with good texture and look nice at the same time?Any good tips on making muffins?
Well, it's hard to bake anything with really juicy fruits in them. You can use either canned or fresh fruit, ut don't use frozen fruits. Before you put it in the batter, take a towel or paper towel and blot off as much water from the fruit as you can.Any good tips on making muffins?
STRAWBERRY-MANGO MUFFINS





1 1/2 cups flour


3/4 cup sugar


1 tbsp. baking powder


1/2 tsp. baking soda


1/2 tsp. salt


3/4 cup buttermilk


1 egg


1/3 cup butter or margarine, melted


1/2 tsp. almond extract


1/2 cup chopped fresh strawberries


1/2 cup chopped fresh mango


1 tbsp. sugar


1/2 tsp. cinnamon





Mix together flour, sugar, baking powder, baking soda and salt;


set aside.





Beat together buttermilk and egg. Add butter and almond extract


and beat well. Stir buttermilk mixture, strawberries and mango into


flour mixture just until moistened.





Fill greased or paper-lined muffin cups 3/4 full. Combine sugar


and cinnamon and sprinkle evenly over muffins.





Bake at 400 for 15 minutes or until muffins test done.
Maybe use a bit of that butter spray stuff in the bottom of the muffin pan?,and lightly spray a bit of water on top after they bake a bit,I am not a baker just guessing really!!
Certain fruits break down and give off a lot of moisture while baking, including strawberries and mangoes. The best thing to do is stir the batter as little as possible (muffin batter should always be lumpy when you scoop it into the muffin pan) and don't over-bake them.
